Sundowner Mojito

Warm evenings in the garden call for a cocktail, or two. This sundowner mojito made with Lancashire Cuckoo rum is the perfect blend of refreshing and punchy. It’s a great drink to kick off a summer BBQ party.

Serves 1

Ingredients:
50ml Cuckoo Sundowner Rum
Soda water
8-10 mint leaves
4 wedges of fresh lime
Brown sugar

Method:
Add mint leaves, fresh lime and brown sugar to a rocks glass. Muddle the ingredients and add Cuckoo Sundowner Rum. Crush some ice and add it to the glass, stirring so the ingredients don’t sit at the bottom. Add more crushed ice and top with soda water.

Cuckoo Sundowner Rum

Sundowner Rum is named after the boat owned by local hero, Charles Lightoller. As well as the highest-ranking naval officer to survive the Titanic disaster, by clinging to an overturned lifeboat, Charles was a war hero, sailing Sundowner across the channel to rescue soldiers from the beach at Dunkirk in World War Two. What a man! A true Lancashire hero. Raise a glass of Sundowner to ‘Lights’ as he was known. Rich notes of banana, vanilla and sugar cane are a nod back to rums routes in the Caribbean. Honey and a little sarsaparilla give it that Lancashire edge.
