American Pancakes

Serve up these scrumptious pancakes for a special Shrove Tuesday treat.

Ingredients 
Makes 10-12 small pancakes
25g wholemeal self-raising flour
100g white self-raising flour
Pinch of bicarbonate of soda
1 egg beaten
150ml semi-skimmed milk
Mixed berries to serve
1 level dessert spoon of sugar
Sunflower oil for serving

Method

Sift the flours and the bicarbonate of soda in to a mixing bowl. Make a hole in the centre of the flour.

Break the egg into the measuring jug, add the milk and sugar and beat together.

Gradually whisk in the egg and milk mixture into the flour. Leave to stand for 10 minutes.

Heat the frying pan, add 1 teaspoon of sunflower oil and pour a small amount of batter into the pan 3 times to make 3 small pancakes.

Cook the pancakes until set around the edges and bubbles appear on the surface.

Using a fish slice, turn the pancakes over, and cook the second side until lightly browned.

Stack onto a warmed plate, decorated with berries of your choice and serve!
