To make 12 mince pies, you’ll need these ingredients:
- 680g plain flour
- 400g cold, unsalted butter
- 4 tbsp caster sugar
- 5 large egg yolks (leave one to the side for brushing the tops!)
- A pinch of salt
- A jar of mincemeat
Preheat your oven to 175C and grease a muffin tin with butter.
Sieve the flour and salt together in a bowl. Rub in the in the cold butter using your fingers until you have a crumble-like mixture.
Then, stir in the sugar and the egg yolks, before adding the water a tablespoon at a time until the mixture comes together to form dough. Press it into a bowl, wrap it in Clingfilm and chill for ten minutes.
Once the dough has chilled, roll it out onto a flour dusted side with a rolling pin.
Then, using a round cutter, cut out circles to fit into your tin before gently pushing your dough circles in.
Add approximately a teaspoon of mincemeat into each mince pie.
With your leftover dough, cut out your favourite festive shapes and pop them on top of the pies and brush each one with the remaining egg yolk.
Bake for 15 to 20 minutes until glossy and golden brown.
Best served with a glass of cocoa or sherry, not forgetting a carrot for the reindeer!
